The Littlest Egg

I’ve never seen so small and egg.  Not from my hens.

The regular sized egg had a soft spot and surface cracks, so I gave them both to the hens to eat.

Jon and I made poached eggs for the first time yesterday.  (Jon wrote about it on his blog) We did a pretty good job, but  the whites all pooled to one side and didn’t have that soft creamy consistency that makes a poached egg so special.

We were hoping to try again this morning and see if we could make them even better.

Maybe tomorrow.
