
I know zucchini is often seen as a second class vegetable. This time of year people are even giving them away. They’re too easy to grow, and grow too big too quickly.
But I love zucchini.
I grow it every year for all the reasons people don’t like it. I sauté it with my eggs for breakfast and mix it in with my stir fry for dinner. I bake it with romano cheese in the oven and today I made zucchini pancakes.
I try to pick my zucchini when it’s still small, no more than ten inches long. But I let two grow bigger and today grated them up with some onion and made them into pancakes for lunch.

The only problem is that I always eat too many of them.
I have a very simple recipe that is quick and easy to make. If anyone out there has any tips or things you like to add to your Zucchini pancakes, I’d love to hear them.

I put some basil in sometimes
Sometimes some chopped tomatoe
Sometimes some crumbled goat cheese
And sometimes all of them
With tomatoe need an extra bit of flour added
